刀具方面,Forged是指从一块整钢片加热(或ice-hardened)捶打锻造出来的,钢质比较好钢片比较厚,属于高端的产品。 Stamped是指从一整片钢片上,象用cookie cutter切下一块钢片做出的刀片,钢体比较薄,等等。
Forged and stamped knives differ mainly by how they are made:
forged knives are heated and pounded from a single bar of steel, while stamped knives are cut out from a large sheet of metal like a cookie cutter.Forged KnivesProcess: Heated and hammered into shape, creating a thicker, heavier blade.Bolster: Features a thick metal junction (bolster) between the blade and handle for balance and safety.Weight & Feel: Heavier (often 8–10 oz) and very sturdy in the hand.Pros: Highly durable, holds a sharp edge longer, and offers great balance.Cons: More expensive and heavier, which can tire your hand during long prep work.
Stamped KnivesProcess: Cut or punched out from a flat sheet of stainless steel, then heat-treated and sharpened.Bolster: Usually does not have a bolster, meaning uniform thickness from end to end.Weight & Feel: Lightweight (often 5–7 oz) and more flexible.Pros: Budget-friendly, lightweight, and easy to lift or maneuver quickly.Cons: Less durable, can flex or warp under heavy pressure, and loses its sharp edge faster than a forged blade.
